Arguably the most pronounced soft cheese with a bloomy rind. Its aroma, which intensifies with age, should evoke mold, damp leaves, and mushrooms. At its peak of maturation, it has a soft, shiny interior, ranging in colour from pale straw yellow to buttery, and a rich, While it has a strong ammonia smell, its attack on the palate is brutal. If you prefer a runny brie, without a layer of chalky curd in the center, buy it as close to its ripening date as possible. Don't worry if a little mold develops on the sides of the cut, this is proof that the cheese is alive and well and trying to keep its insides from drying out.
