An alpine cheese similar to Gruyère but made in the French Jura Massif.  This variation is aged 8 months, but flavours vary in intensity based on the cheese’s age - notes of apricot, hazelnuts and toffee are persistent.  A wonderfully versatile cheese, it is great for snacking as well as for cooking, and it also pairs well with almost any wine.  Large-sized Comte cheese historically made it possible to store milk and feed humans during the long winters in the mountains.  This milk comes exclusively from French Montbéliarde or Simmental cows, who are known for their longevity, and high yields of cheese from their comparably lower yields of milk.  For 5 generations, the Petite family has brought its sensitivity to the AOP Comté which it produces in traditional fruit farms.  The cheese is matured for a minimum of 8 months in temperate cellars, and these AOP counties are the subject of special attention with a selection from wheel to wheel meeting specifications.  Buttery paste, slightly ripe hazelnut flavour; a fruity and gourmet taste, with aromas of dried fruits.
