Hercule des Pyrénées


This cheese takes the nutty flavor of ewe’s milk and combines it with the tangy acidity of goat’s milk, resulting in a fromage that is buttery and rich, with an agreeable hint of sweetness on the finish. It is aged between nine to twelve months, and with such perfectly balanced flavor and caramel richness, it’s easy to understand why this one is a crowd-pleaser.

Hercule is born from an old tradition when sheperds always kept a few ewes in their goat herd to secure their food supply as they thought that goats were more prone to catch diseases.

With no room to waste milk, farmers used to blend the different types of milk, from ewe and goat, to make the cheese.This belief resulted in incredibly flavourful and rich cheese.

Hercule is made from 50% of each milk
