tomme aux fleurs


This cheese is both visually stunning and delicious, Tomme aux Fleurs is made is made in small batches by artisan cheesemakers in Austria.  Made from thermalized cow's milk, it first undergoes 6 months of maturation in cool fresh cellars, then undergoes a second ripening period after the wild flowers are added to the rind to allow introduction of the aromas into the cheese.  The final product is bold, robust, with a subtle saltiness, hazelnut and spanakopita flavours and with wisps of edible wildflowers (mallow, bachelor button, calendula, strawberry, rose and dandelion).
