Revered for its rich flavours of butterscotch, whiskey, and pecan, this gouda has a deep ochre interior and a firm, crumbly texture.  True to the characteristics of Beemster’s unique milk, this cheese retains a creamy mouthfeel, even though it's aged for more than 2 years.  It is also studded with crunchy, mouthwatering protein crystals that surprise the palate!  Crafted in a registered UNESCO World Heritage Site, the region’s slate-blue clay soil contains exceptional levels of nutrients and minerals, making its grasses ideal for grazing animals.  Only Beemster cows and goats get to graze on these special grasses, which make their milk sweeter, richer, and creamier. It in considered some of the finest milk in the world.  Pair with olives, fig cake, spicy honey roasted nuts or honeycomb, and enjoy with a dark beer.  (But don’t eat the rind!)
