BLANC BLEU DU RIZET
This raw milk (always made using milk from the same herd of 200 milking goats, kids and 7 bucks) farmstead cheese has a bloomy rind speckled with white and blue molds. It has a rich, butter flavour with a classic goat tang.
Rich and buttery, fresh and lightly tangy, it is an extraordinary expression of a classic goat cheese.
The RIZET family has been operating the farm located in Montot since the 1900s. The Oudrache River meanders nonchalantly through the beautiful green meadows. These produce quality grass to the delight of the goat herd. The Blanc Bleu du Rizet is so named because of the magnificent white and blue down that covers it during ripening.
